Spicy Paloma

The Spicy Paloma is a muddled agave cocktail from Mexico, fresh and citrusy and long and fizzy. It is made with jalapeño slices, tequila blanco, lime juice and more, served in a highball over ice.

Ingredients

Jalapeño slices2 slices
Tequila blanco50 ml (1¾ oz)
Lime juice15 ml (½ oz)
Grapefruit sodatop up, about 120 ml

Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.

Method

  1. Fill a highball with ice.
  2. Pour the ingredients in order, topping last.
  3. Lift once gently with a barspoon.
  4. Garnish with chilli salt rim and grapefruit wedge.
