Poncha

The Poncha is a built rum cocktail from Spain and Portugal, fresh and citrusy. It is made with raw honey, lemon juice and Aguardente de cana, served in a rocks glass.

Madeira’s fisherman’s drink, whipped with a carved wooden stick called a caralhinho. Stronger than it tastes, as every Madeiran will tell you.

Ingredients

Raw honey15 ml (½ oz)
Lemon juice40 ml (1¼ oz)
Aguardente de cana60 ml (2 oz)

Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.

Method

  1. Work the honey into the lemon juice with a wooden stick until it fully dissolves.
  2. Add the aguardente de cana and keep stirring in one direction for 30 seconds until it turns slightly frothy.
  3. Serve in a small tumbler, traditionally without ice.
