Lime Rickey

The Lime Rickey is an alcohol-free drink from United States, fresh and citrusy and long and fizzy. It is made with lime juice, simple syrup and soda water, served in a highball over ice.

The American soda-fountain cousin of the Gin Rickey, from when soda fountains were the bars.

Ingredients

Lime juice30 ml (1 oz)
Simple syrup20 ml (¾ oz)
Soda watertop up, about 150 ml

Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.

Method

  1. Fill a highball with ice.
  2. Pour the ingredients in order, topping last.
  3. Lift once gently with a barspoon.
  4. Garnish with lime wedge.
