IBA Tiki
IBA official cocktail, New Era. Rum based, shaken, served in a highball.
Ingredients
| Fresh ginger | 1 slice |
| Aged rum | 30 ml (1 oz) |
| Smoky aged rum | 30 ml (1 oz) |
| Amaretto | 15 ml (½ oz) |
| Frangelico | 5 ml (¼ oz) |
| Maraschino liqueur | 5 drops |
| Passion fruit purée | 30 ml (1 oz) |
| Pineapple juice | 90 ml (3 oz) |
| Lime juice | 30 ml (1 oz) |
Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.
Method
- Muddle the ginger slice in a shaker.
- Add everything else and shake hard with ice.
- Strain into a tiki glass filled with crushed ice.
- Garnish with citrus and a dried pineapple slice.
