Wine based, built, served in a highball.

Chile’s Fiestas Patrias drink, credited to Santiago bars after the 1985 earthquake. Order a second and it becomes a Réplica, the aftershock.

Ingredients

Pineapple ice cream2 scoops
Pipeño or white wine200 ml (6¾ oz)
Grenadine30 ml (1 oz)

Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.

Method

  1. Put the pineapple ice cream in a large glass.
  2. Pour the pipeño over it slowly so it foams but does not overflow.
  3. Top with the grenadine. Many bars add a splash of fernet as well.
