IBA official cocktail, The Unforgettables. Brandy based, stirred, served in a rocks glass.

Ingredients

Cognac50 ml (1¾ oz)
Absintherinse
Sugar cube1 cube
Peychaud's bitters2 dashes

Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.

Method

  1. Rinse a chilled rocks glass with absinthe and discard the excess.
  2. Muddle the sugar cube with the bitters and a drop of water in a mixing glass.
  3. Add the cognac and ice, then stir until cold.
  4. Strain into the rinsed glass with no ice and express lemon peel over the top.
