Benton’s Old Fashioned

The Benton’s Old Fashioned is a stirred whiskey cocktail from United States, spirit-forward. It is made with bacon fat-washed bourbon, maple syrup and Angostura bitters, served in a rocks glass over a large cube.

Ingredients

Bacon fat-washed bourbon60 ml (2 oz)
Maple syrup7.5 ml (¼ oz)
Angostura bitters2 dashes

Measures for one serve. Open the drink in Bar Bible to scale it to a batch or switch to ounces.

Method

  1. Stir the bacon-washed bourbon, maple syrup and bitters with ice until cold.
  2. Strain over a large cube and express an orange peel over the top.
  3. For the bourbon: stir 45 ml of warm bacon fat into a 750 ml bottle, rest for four hours, freeze until the fat sets, then strain it out.
